You raise a really important point, one that I hadn't quite gotten around to writing about yet, but which has been in my mind. Road-food is AWFUL. Between it and the problems with US airport security, I've told my boss that I will not travel for work unless there's no conceivable alternative. I need to acknowledge within myself that that is a significant lifestyle change.

I'm in two minds about government regulation of the food supplies, but I have absolutely no problem with regulating what's served in schools and institutions, and prohibiting the Corn Syrup and Salt Corporation from advertising or vending on school property.

Sadly, though, in the US, the government heavily subsidizes the production of the corn that undergirds the whole junkfood nation, so the prospect of it turning around and regulating that industry seems pretty remote.

The change in people's individual behavior towards superabundant food will take at least a couple of generations, I think.
