Icing is two eggwhites and a pound of powdered/icing sugar, plus some vanilla, some cinnamon, and a little milk or water as needed to get it to the consistency of heavy cream.
The eggwhite makes it dry to a nice, crisp, shiny shell.
I just took a closer look at the recipe at that link, and it's...screwy. I entered it on Livestrong mostly to calculate the calories.
Here is the source recipe. I'm using it pretty much exactly as written, except for the substitution of 420 grams of GF flour blend for the 3 cups of regular flour (plus one teaspoon of xanthan gum and 1/2 a teaspoon of guar gum--I'm kind of loosey-goosey with the gums, but they do add structure.)
I've learned not to measure cup for cup in GF substitutions, but to weigh the GF flour, 140 grams GF replacing one cup of flour in the original recipe.
Dang it. You lost me at "weigh". I'm an indifferent baker at the best of times, and the gluten-free recipes already add a level of BS that I don't like dealing with because of the multiple ingredients substitution thing.
There are sources of GF flour blends pre-made up, and if you don't like weighing, I think you can get good results by just using a little less than a cup per 1 cup indicated in the recipe, like maybe 2-2/3 cups of flour blend for the 3 cups called for in the recipe.
