Ganache-filled shortbread pillows, Trial Number Three, was a tiny batch of eight cookies, which kind of fell apart before I could photograph them. (The crumbs were tasty, though).

Trial Number Four is approaching the goal. I used 1/16"guide strips to roll the dough, and 1/4" strips to roll the ganache (yes, I rolled it out and cut it--used cocoa powder to dust the rolling pin), and everything came out much nicer.




On the plus side: Crisp, golden, good ratio of chocolate to cookie, even size


On the improvement list: cookie part is a little TOO flaky. Extremely fragile while hot, and still fragile when cooled. Ganache is more bitter than I'd like--maybe use sugar instead of cocoa to roll it out?. Still some gaps in dough showing the filling. Possibly this isn't a bad thing.

I'm having a couple of them with my tea right now (morning after baking--they've had a chance to settle in) and they're not bad. A little bland, I think. I'm seriously leaning toward a milk-chocolate ganache next time. And hazelnut paste. Because I like hazelnuts in just about everything.

Ha! Brown and green--it's practically meat and vegetables!

I will bring a box of them up tomorrow for your expert critique. I'm pretty sure you'll agree that they need to be a tad sweeter, but it's not like they're inedible.

I've learned a lot with this project. And making these little suckers is akin to making Chinese dumplings (or, as I think you said, ravioli)--filling in a dough. Hassle-o-rama, but fun.

I need a second Wilton silicone candy-mold "pan" because the one I've got has two dozen cavities, and a regular batch of these would be at LEAST twice that many cookies. Since they bake for nearly an hour, and they're such a production-line project, it would be worth owning the second pan. Now if I could just find another one!

Seems like we could find one at Michele's or Joann's. Maybe we will go to the Michele's on 164th tomorrow (after a nice walk?) and finish the day with a little mazithra spaghetti at the old Factory. There's a Bed Bath over there too if Michele's doesn't have it.

I like the way you think! No great surprise there, since we often think alike, but I heartily approve your entire plan.

Um...tomorrow's not Mother's Day, is it? Thinking of crowded restaurants, but perhaps not a worry. As I recall, I got the existing mold pan at Michael's. Or maybe Craft Warehouse? Can't find it online to save my soul, which makes me think it's not in production, but I'll persist.
